Is there a reason for calling something a tiling pattern versus a tessellation, or are they synonyms? Seems that the more 'prototypical' a figure, e.g. polyominoes, the more likely one is to say 'tiling'. Whereas Escher-type designs with recognisable figures like fish/birds are more likely to be called tessellations. Where, technically, is the distinction, if there is one?

Tessellation is a synonym for tiling.

Good math-sociology question!
> or are they synonyms?
Seem to be, pretty much.

Yep, good observation.
> Where, technically, is the distinction, if there is one?
There doesn't seem to BE one, as you observe. Seems to be a matter of taste in context.
It's a bit like the difference between a mapping and a function.
Or a set and a small class.
Or a multi-valued partial function and a relation...

About the same between the fiddle and violin.
They're the same (SFAIK) but one word sounds more high falutin.

There is a difference in common word usage: Tiling is on the whole plane or whole space. Tessellation is usually used for hyperbolic geometries of the unit disk ( in context).
