Lettuce is frequently sold in chopped form, mixed with other salad produce. I think that has to count as processing, doesn't it?

Agreed. I've not seen any satisfactory answer to this question. I suspect its some sort of trick question. Maybe the answer is 'Christmas Tree' or some such nonsense.
